- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- ⅓ cup white granulated sugar
- ⅓ cup dark brown sugar
- 3½ tsp baking powder
- ½ tsp salt
- 1 egg
- 1 cup milk add 2 tbsp butter if nonfat
- ⅓ cup olive oil
preheat oven to 400°F (200°C)
grease 9" cake pan (do not use glass pans)
In large bowl, combine flour, cornmeal, white sugar, dark brown sugar, salt, and baking powder.
Stir in egg, milk and olive oil until well combined.
Pour batter into prepared pan.
Bake in pre-heated oven for 20 to 25 minutes, or until a knife inserted into the center comes out clean.
