Tropical Banana Bread
Tropical Banana Bread – Super Moist and Gluten-Free!
If you're cruising in tropical waters, then chances are you'll have a bunch (or three) of bananas handy at all times. Despite best efforts, they all seem to ripen at once. So what's a savvy sailing girl to do? Right… make banana bread! This soft and fluffy gluten-free banana bread is totally yummy!
Ingredients
- 2 cups gluten free flour do NOT substitute/use regular flour in this recipe, it will come out dry!
- 4-5 very-ripe bananas mashed
- ¼ cup white sugar
- ¼ cup brown sugar
- ½ cup butter (1 stick), softened
- 2 eggs
- 2 tbsp milk
- 1-2 tsp vanilla
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup walnuts or other nuts
- ½ cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees F (175 degrees C)
- Lightly grease a 9" x 5" loaf pan and set aside
- In a large bowl, combine flour, baking soda, baking powder and salt. Set aside
- In a separate bowl, cream together butter and sugars (white and brown). Stir in eggs, milk, vanilla and mashed bananas until well blended. Stir banana mixture and nuts (also chocolate chips if desired) into the flour mix. Stir just enough to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for about 50 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for at least 15 minutes, then turn out onto wire rack and cool for another 30 minutes. Slice and serve warm!
